CHICKEN IN COCONUT MILK WITH LEMONGRASS

Have you ever looked at a picture of food and literally starting drooling? Well, this recipe is definitely worthy of it’s photo.  This is a great recipe for so many reasons with Crohn’s. It is surprisingly easy to make, even though the flavor is complex. To make it even better, lemongrass, cinnamon and garlic are there to give you an extra immunity and anti-inflammatory boost. Make sure to slurp up that delicious bone broth lurking at the bottom of the pot, and you will find your gut doing a happy dance.

*Crohn’s Alterations: If leafy greens upset your stomach, (cilantro, spinach, kale) you leave them out completely. (The dish has enough other flavors going on if they bother you.) Or, let the greens simmer for an extended period time so they can break down and easier to digest.  You can leave out the lemon if you can’t tolerate the citrus, but if you miss the lemon flavor you can experiment with sumac.
