Exhaustion and fatigue seem to go hand and hand with Crohn’s Disease. Just getting out of bed in the morning can feel like a HUGE accomplishment some days. In the endless search for hidden energy, (it’s in there somewhere, right?) we will take a boost anywhere we can get it. That is why these Banana Oat Energy Bites are so great with Crohn’s. Not only are they packed full of much needed nutrients, but they are naturally gluten free and super easy to make. If you find your mornings are crazy, taking a moment to make them the night before will ensure a healthy, energetic breakfast on your way out the door the next morning.
If you are on a limited diet, you can make these energy bites very simple, but still delicious with just a few basic ingredients. (For many people with Crohn’s, bananas and oatmeal can be soothing during flare-ups.) If you’d like to spice them up a bit you can easily add all kinds of ingredients right into the mix, (like chocolate chips, raisins, cranberries, blueberries, ginger or nutmeg) depending on what works for you. You can also try out your choice of dipping sauce, such as peanut butter, Nutella, or even syrup. Serve the sauce on the side, or just drizzle it right on top of the bites.
1 Cup of Rolled Outs
1 Ripe and Soft Banana
Dash of Cinnamon
Mash banana in a large bowl and a dash of cinnamon. Add the oats slowly to the banana, mixing until thoroughly combined. Roll mixture into bite size balls, and set on a baking sheet. Place energy bites into a preheated 350 degree oven for 10-12 minutes. Or, if you are in a real time crunch, simply microwave the bites on a plate for 45 seconds to 1 1/2 minutes (depending on size of the balls.) Place your choice of topping in a mug, and microwave until soft and smooth. Slowly drizzle the topping over the bites and enjoy, or place them in the fridge for an easy breakfast tomorrow!!
